Serves: 4 Preparation Time: 10 min Cooking Time: 25 min Ingredients 2 pounds whole pumpkin (or other winter squash) 1 onion, chopped 2 cups chicken or vegetable stock 1 tablespoon mild chili powder 1 cup white beans, cooked 1 cup frozen lima beans 1 cup brown rice, barley, or other cooked grain 1 cup fresh or frozen corn kernels Salt and pepper to taste Instructions 1. To prepare pumpkin: Puncture pumpkin's skin with a knife or fork in several places and place in microwave for 3 to 6 minutes, until it is soft enough to cut in half. Cut in half and cool, if necessary, before scraping out seeds. 2. Bring 1/4 cup of stock to a boil and add onions. Cook for 5 - 10 minutes. Serves: 8 Ingredients 1 tablespoon margarine or butter substitute, softened 1 / 2 cup onion, chopped finely 1 garlic clove, well minced 1 / 2 pound mushrooms, sliced 2 tablespoons whole wheat flour 1 teaspoon curry powder or garam masala 2 cups low sodium chicken stock 1 14-ounce can pumpkin, or 2 cups fresh pumpkin, cooked 1 tablespoon honey Freshly grated nutmeg, to taste 2 cups skim milk Instructions 1. In large saucepan, melt margarine over medium heat; cook onion, garlic and mushrooms for 8 to 10 minutes or until softened. 2. Stir in flour and curry powder; cook for 1 minute over low heat, stirring, until well blended. 3. Gradually add stock, whisking until smooth. 4. Stir in pumpkin and honey; season with nutmeg to taste. 5. Cook over low heat for 15 minutes, stirring occasionally. 6. Add milk and heat until hot.
