VLCD Beverages VLCD Strawberry Coconut Smoothie by Sarah Gaddis Koski 1 TBSP of Milk ¼ cup of water Ice 10 medium Strawberries, sliced 5 drops of Coconut Flavored Capella Drops Place ingredients into blender and blend until smooth. Add stevia upon taste. Page 2 VLCD Mojitos by Don HCG Sea Salt the rim of a large glass, scratch/score cucumber with a fork, then slice cucumber. Finely dice mint leaves. Put cucumber and mint into glass. Add ice, a couple of drops of stevia and fill with Perrier water. Stir, taste, and adjust sweetness as desired. Squeeze juice of 1/8 of a lemon into the drink. Serve with lemon slices and float mint leaves on top and enjoy! *As long as you do not eat the cucumber, it doesn’t count towards your serving of vegetable. VLCD Strawberry Cheesecake Fizz Slushie by Lisa Swinson 6 large frozen strawberries cut into quarters 1 to 1 ½ cups of Perrier 1 dropper full of Sweetleaf Stevia Vanilla Crème, more or less to taste 6-8 drops of Capella NY Cheesecake drops, more or less to taste Blend everything in a Magic Bullet or similar appliance until the strawberries are pulverized. Place into freezer until it reaches desired consistency. VLCD Sparkling Apple Pie by Lisa Swinson One apple, chopped (Place in freezer to freeze ahead of time.) A pinch of nutmeg 1 cup of Perrier Stevia, to taste Cinnamon, to taste Blend all ingredients together and enjoy! VLCD Chocolate & Greens Shake by Amy HCG 6-8 oz water 1 scoop MRM Chocolate Powder 3-4 'cubes' frozen spinach 5 drops chocolate fudge brownie Capella drops 1 squirt clear stevia Blend thoroughly, drink immediately, and enjoy! *Note: This counts as one serving of protein AND this recipe uses a VLCD vegetable choice. VLCD Whey Strawberry Ice Cream or Dreamsicle by Wanda Spears 5.5 oz. of Strawberries, frozen ½ cup of Ice ½ cup of Perrier 1 pk. Of MRM vanilla whey protein powder 1 packet of stevia Blend well, it turns out quite thick. Substitute with frozen orange slices and make a Dreamsicle. This counts as a protein and fruit serving. VLCD Soda Recipes by Jeni Sevilla Crème Soda (my absolute favorite) 10 drops root beer flavored sweet leaf drops 4 drops vanilla crème flavored sweet leaf drops 8 oz. mineral water Root beer 15 drops root beer flavored sweet leaf drops 8 oz. mineral water Page 3 Orange soda 15 drops Valencia orange flavored sweet leaf drops OR 5-6 drops Capella Root Beer Float, with Clear Stevia to taste 8 oz. mineral water “7-UP” 10 drops Valencia orange flavored sweet leaf drops OR 5-6 drops Capella Lemon-Lime, with Clear Stevia to taste 8 oz. mineral water Orange Crème 10 drops Valencia orange flavored sweet leaf drops 4 drops vanilla crème flavored sweet leaf drops 8 oz. mineral water VLCD Orange Cream Slush by Kelsy Leyendecker OK so for your fruit serving, take an Orange. Stick it in the blender with a little water to help it all mix and then add ice till it’s the consistency you'd like it to be. Then you add the Vanilla Cream Stevia drops (to taste). VLCD Soups Page 4 VLCD Poor Man’s Chowder by Don HCG Put 4 tomatoes and approx. 3/4 cup of water in blender and blend, pour into pot. Season with pepper, paprika, basil, savory, and onion flakes, Braggs, hot sauce and for those of us who like it spicier add crushed red pepper flakes. Bring to boil add a few drops of stevia to bring out the sweetness of the tomatoes and adjust seasoning to taste. Cut Halibut into bite size pieces and add it raw to the soup, simmer and serve when Halibut is cooked. With Halibut this works out to 198 calories for the whole pot and it is a big pot of soup. Use your Melba for dipping or crush and put on top, add the 20 calories for this. I think it's a cross between minestrone and a fish soup, quite tasty and great for those colder nights. I also added buffalo meatballs instead of Halibut and it also was very tasty. You can substitute any protein you wish for the Halibut. ** VLCD ALERT ** Please keep in the mind the calorie count and vegetable intake when having this choice. This choice does go over the suggest allowed amount of 1 Medium Tomato however as long as you do not exceed your 500 calories for the day you have the green light! VLCD Lasagna Soup by Angela Lentz 1 tomato, chopped Garlic, to taste Italian seasoning, to taste ½ tsp. of Bragg’s Aminos ½ cup of fat-free Cottage Cheese Place chopped tomato, in blender until smooth. Heat mixture into sauce pan along with the spices, once it starts to simmer, add the cottage cheese. Continue to heat thoroughly and enjoy! I also added my serving of melba rounds, crumbled on top to be “croutons”. VLCD Green Onion Soup by Kristy Erickson Ramey Green Onions, chopped 2 c fat free low sodium organic beef broth 1-2 t liquid aminos 1 t parsley 1 packet Sweetleaf stevia powder or to taste 1/2 t paprika 1/2 t salt 1/2 t dill 1/2 t thyme 1/8 t cayenne pepper 1/8 t celery seed Cook chicken, then add all of the above to it, simmer 20 minutes. VLCD Basic Chicken Broth by MyHCGPlus Using pre-weighed boneless, skinless chicken breasts will eliminate any need for straining fat, while the resulting cooked portions can be readily used in recipes that call for boiled or poached chicken breasts. Four 3.5 ounce boneless, skinless chicken breasts 1/2 large onion, roughly chopped 1 large celery stalk with leaves, roughly chopped 1 garlic clove, roughly chopped Small handful parsley sprigs 1 thyme sprig 1 bay leaf 8 cups water Salt and pepper to taste 1. Place all ingredients in a large soup pot and bring just to a boil over high heat. 2. Reduce heat to a very low simmer and cook, covered with a lid, for 2 1/2 hours. 3. Remove chicken breasts with tongs and set aside for later use. 4. Strain broth and keep refrigerated or frozen if not using immediately. Makes about 4 cups VLCD Single Serve Chili by Karen Ball Erickson 3.5 oz ground sirloin, 96% lean 2 c. vegetable or beef broth' 1 tomato Sea salt Ground garlic powder to taste Chili powder (about a teaspoon) or some Frank’s Hot sauce Onion salt to taste Dash of celery seed Dried cilantro Page 5 Brown the beef add the broth then the tomato and seasonings. Bring to a boil. Lower heat and simmer for about 15 to 20 minutes. Enjoy a hearty bowl of chili on a cool fall or winter day!! YUM! VLCD Soup by Cathleen Vernon I browned 100 grams of extra lean ground beef in a saucepan. I buy 92% lean. If you brown it slowly, there will be a little bit of fat in the pan. Then I added my two cups of shredded cabbage and stir-fried the meat and cabbage with salt and pepper to taste for about a minute, maybe less. I crushed one whole clove of garlic and added that to the mix. I drizzled a tiny amount (probably 1/4 tsp.) of apple cider vinegar on top, waved a stevia packet over the mixture and continued stirring. Then I added some fat free low sodium chicken broth-- enough to make it like a stew/very thick soup-- not enough to cover the ingredients. Then I added some basil and paprika. WOW. Chicken Chili by Toni Whaley 100 grams chicken breast 1 Cup chopped tomatoes (I removed the skin) 1 1/2 Cup of Water 1 TBSP Apple Cider Vinegar Onion powder to taste 3 cloves of garlic, minced 1 Tsp Garlic powder 2 Tsp of Chili powder (or to taste) DIVIDED 2 Large Dashes of Hot Sauce DIVIDED Dash of Cayenne Pepper Salt and Pepper to taste. Page 6 In one saucepan put 1 cup of water, 1 TBSP of Chili powder, 1 tsp of Garlic powder, Large dash of hot sauce, Salt and pepper bring to boil and add chicken. Once chicken is done take out to cool and shred. In another saucepan, I use the smallest on I have put in 1 cup of tomatoes, 1 TBSP Apple Cider Vinegar, onion powder, minced garlic, 1 TBSP of Chili powder, large dash of hot sauce, and salt and pepper to taste, bring to a boil to cook tomatoes down. You might need to add more seasoning to taste or water to get to the consistency you desire one the tomatoes are cooked down add the shredded chicken and let simmer. This had lots of flavor and I really enjoyed the sauce it even thickened some and was dark brown like chili sauce would be! Serve it with a Grissini Bread stick. VLCD Curried Asparagus Chicken Soup by Joanna Mullet Trumbo Curried Asparagus Chicken Soup 2 cups water (I used about 3) 100 grams chicken breast Asparagus (allowed amount-chopped) 1/2 t coriander 1 t curry powder 1/2 t cumin Salt / pepper to taste 1 t. garlic powder 1 t. onion powder Poach chicken in water with spices to make broth. Remove chicken and set aside to cool. Bring broth to a boil, add asparagus. Boil until tender. Put asparagus with a little of the broth in blender, puree until smooth, place back in pan. Dice chicken into cubes, and pan sear with additional curry, coriander and cumin, if desired. Place chicken back into soup- stir well. You can let it cook down a little to reach desired consistency if it's too watery. Yummy! Page 7 Shrimp Curry Soup, by Bunny Hcg 100 g shrimp 1 Roma tomato 1 teaspoon minced garlic clove 1/2 teaspoon ground cinnamon 1/2 teaspoon curry powder 1/2 cup fat-free VLCD approved chicken broth (or homemade is best) Some stevia powder (if you like sweet and spicy) Heat spices & sauté minced garlic in fry pan Splash a little chicken broth into the pan & mix with the spices. Add chopped tomato and cook down a bit. (I use approximatelyn1/2 cup chicken stock total). Allow to simmer so the tomato breaks apart and cook down. VLCD Dressings & Sauces VLCD Honey Mustard by Michelle Hess Mustard (no sugar) Apple Cider Vinegar (start with a teaspoon) Stevia to taste Add water if you need it thinner. Mix to taste and enjoy! VLCD Ketchup by Amy HCG 2 tbsp tomato paste (double check ingredients for sugar, etc) 2 tbsp Apple Cider Vinegar 1 tbsp lemon juice 1/4 tsp celery salt 1/2 tsp paprika 1/4 tsp mustard powder Pinch of nutmeg and clove Pinch of black pepper 1/4 tsp onion powder 1/4 tsp garlic powder Stevia to taste Page 8 Dissolve spices in vinegar and lemon juice. Add tomato paste and mix thoroughly. Add additional lemon juice, vinegar or a little water until desired consistency is reached. * Note this recipe uses a VLCD vegetable choice. It cannot be combined with a different veggie but, you may add more tomato to your meal or as a snack. VLCD Dressing by Rocky King 1/3 c. Braggs Apple Cider Vinegar 1/2 c. or more water 1/2 tsp. sea salt 1/2 tsp. black pepper 3/4 tsp. minced garlic 1/2 tsp. stevia-I use less 1 tsp. oregano 1/2 tsp. cumin 1/2 tsp. red pepper flakes VLCD BBQ Mustard Sauce by Lisa Swinson 1/2 cup apple cider vinegar 1/3 cup prepared mustard, sugar free 1 tsp onion powder 1 tsp garlic 1 tsp hot sauce (more or less, to taste) 1/2 tsp salt 8 tsp sugar substitute Bring vinegar to a boil. VLCD Japanese Soy Dressing by MyHCGPlus 2 garlic cloves, minced 2 tsp. of minced fresh ginger ¼ tsp. of powdered mustard Juice of ½ a lemon 2 TBSP of Apple Cider Vinegar 6 drops of Stevia Apricot Nectar flavored drops 8 drops of KAL Pure Stevia ½ cup of broth or water 1/3 cup of Bragg’s Liquid Aminos Salt & Pepper to taste Page 9 In a small bowl, whisk together garlic, ginger, mustard, and lemon. In another bowl, combine remaining ingredients. Slowly add it to the garlic mixture. Season to taste. Makes 1 cup and lasts about a week in the refrigerator. VLCD Marinara/Tomato Sauce by Sarah Gaddis Koski 1 large tomato Onion powder, to taste Garlic powder, to taste 1 garlic clove, minced Salt & Pepper to taste Stevia to taste Sauté the tomato with the spices. Once the tomato is soft and cooked thoroughly, transfer it to a food processor and puree into sauce. *This will count as one of your vegetable servings. Homemade Curry Spice by Sherry Heise Henderson All of these ingredients are in the form of seeds with the exception of turmeric: 5 tsp. of Coriander 1 tsp. of Fenu Greek 1 Large Bay Leaf ½ tsp of cumin ½ tsp of black or brown mustard seed 1/5 tsp of cinnamon bark 5 cloves After all the ingredients are ground together, add 2 tsp. of turmeric. VLCD Dip by Kyla Coult ½ cup of fat-free cottage cheese 2 cloves of garlic 1 tsp of mustard (sugar free) Fresh Dill A few drops of ACV and juice from a lemon to taste Put all ingredients into small food processor and blend.
