Breakfast Cherry Loaf (Gluten Free) Ingredients: 5 tablespoons salted, soft butter ½ cup white sugar ½ cup light brown sugar 1 large egg 1 teaspoon vanilla extract 1 cups Bob’s Red Mill Gluten Free All Purpose Flower ½ cup almond meal 1 teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt 3/4 cup plain yogurt 1 cup morello dark cherries in light syrup, drained and pitted Instructions: Preheat over to 375 degrees F. Grease the bottom of one 8 X 3 inch loaf pan. Cream the butter, eggs, vanilla extract, and plain yogurt. In a separate bowl combine all other ingredients except the fresh blueberries. Gradually add the contents of the bowl into the creamed mixture. Do not mix this mixture more than necessary, just make sure everything is evenly combined, then with a wooden spoon, stir in the cherries. Pour the mixture in one loaf pan. Bake for 35 minutes. Remove from the oven and allow to cool for approximately 30 minutes before flipping loaf out of the pan for serving.
